As part of my New Year’s resolutions this year, I have decided to go completely meatless for one month. My reasons are the following: a. In the past few years, I’ve considered going vegetarian but giving up meat is really hard. b. Reading about the way meat is processed freaks me out. c. A recently published study has found that overweight doctors are less likely to discuss weight loss with obese patients than those with normal body mass indexes (BMIs). The study also found that 37 percent of overweight doctors vs. 53 percent of doctors with normal BMIs were confident in their ability to provide patients with effective counseling about their diet or exercise (38 percent vs. 56 percent.) Recipe Description: Cauliflower roasted in big chunks is delicious and the quick blue cheese vinaigrette makes it special. Try it as a side dish.
